1 pound of northern pike fillets, bones eliminated
1 tablespoon olive oil
½ c. chopped celery
½ c. yellow onion, chopped
½ c. orange pepper, diced
½ c. red pepper, diced
2 cloves minced garlic
2 14 ouncescans crushed tomatoes
1 can red kidney beans, drained
2 tablespoons cornstarch
¼ c. cold water
2 tablespoons parsley, chopped
1 teaspoon chili powder (or to taste)
¾ teaspoon table salt
1/8 teaspoon cayenne pepper (or to taste)

Methodology of Preparation

Fish should be reduce into 1” chunks.

Sauté celery, onions, peppers and garlic in oil placed in large saucepan. Cook until tender, stirring regularly. Add seasonings and all remaining ingredients except for the pike chunks.

Cover saucepan and simmer for thirty minutes. Mixture needs to be starting to thicken. Stir occasionally.

Add pike to combination. Proceed simmering for seven to ten minutes. Fish ought to flake easily when finished.
